Tuna Cutlets/Patties (Cheat's Version)

Ingredients:

  1. 1 can of tuna

  2. 2 potatoes, peeled

  3. 1 green chilli, finely chopped

  4. 1 onion (finely chopped)

  5. 3 cloves garlic, finely diced

  6. 1/2 tsp grated ginger

  7. 1 stalk curry leaf

  8. A pinch of turmeric

  9. A pinch of salt

  10. breadcrumbs

  11. eggs, lightly whisked

Method:

  1. Boil the potatoes. Once cooked, break them up with a fork. Do not mash them.

  2. Strain the tuna from the can.

  3. Fry the onion, garlic, ginger, green chilli and curry leaf.

  4. Add the tuna to the fry pan and continue cooking.

  5. Add a pinch of turmeric and salt. Mix it in.

  6. Remove the pan from the heat.

  7. Mix the potatoes into the tuna mixture.

  8. Once cooled, shape into palm-sized patties.

  9. Roll the patty into the egg, and subsequently roll in the breadcrumbs.

  10. Shallow fry the patties.
