Sweet Chilli Salmon

Ingredients:
Four salmon fillets
Olive oil (for grilling)
Marinade:
2 tbsps sweet chilli sauce
1 tbsp soy sauce
1 tbsp mirin
1 tbsp sesame oil
1 tsp freshly grated ginger
3 cloves freshly grated garlic
Method:
Mix all the ingredients listed under 'marinade' and give it a little whisk to make sure it is evenly mixed.
Add the salmon to the marinade and leave it for at least 1 hour.
Heat the fry pan and pour the olive oil in.
When the oil is heated, remove the salmon from the marinade and sear it on high heat for about 6 to 7 minutes.
Remove the cooked salmon and allow it to rest.
Pour the remaining marinade into a saucepan and warm to make a sauce.
Pour sauce over the rested salmon.
