Sweet Chilli Salmon

Ingredients:

  1. Four salmon fillets

  2. Olive oil (for grilling)

Marinade:

  1. 2 tbsps sweet chilli sauce

  2. 1 tbsp soy sauce

  3. 1 tbsp mirin

  4. 1 tbsp sesame oil

  5. 1 tsp freshly grated ginger

  6. 3 cloves freshly grated garlic


Method:

  1. Mix all the ingredients listed under 'marinade' and give it a little whisk to make sure it is evenly mixed.

  2. Add the salmon to the marinade and leave it for at least 1 hour.

  3. Heat the fry pan and pour the olive oil in.

  4. When the oil is heated, remove the salmon from the marinade and sear it on high heat for about 6 to 7 minutes.

  5. Remove the cooked salmon and allow it to rest.

  6. Pour the remaining marinade into a saucepan and warm to make a sauce.

  7. Pour sauce over the rested salmon.
