Blue Chip Chocolate Chip Cookies

Ingredients:

  1. 1/2 cup granulated sugar

  2. 1/2 cup firmly packed light brown sugar

  3. 115g unsalted butter

  4. 1 large egg

  5. 1 tsp vanilla extract

  6. 1/2 tsp baking soda

  7. 1 1/4 cup all-purpose (plain) flour

  8. 1/4 tsp salt

  9. 1 1/2 cups semisweet chocolate chips

  10. 1 cup walnuts/ pecans toasted

Method:

  1. Preheat the oven to 150°C. Line 3 baking trays with baking papers.

  2. Beat the sugars and butter together until smooth. Mix in the egg, vanilla and baking soda.

  3. Stir together the flour and salt, then mix them into the batter. Mix in the chocolate chips and nuts.

  4. Scoop the cookie dough into 2 tbsp (5cm) balls and place 8 balls, spaced 10 cm apart on each tray. I have found that it is easiest to form the balls with your hands rather than spoons.

  5. Bake 18 mins or until pale golden brown. Remove from the oven and cool on a wire rack.
